Soon, he will be adding AMORE MIO Aurora, an Italian restaurant and piano bar to pay homage to the Italian American restaurants of mid-20th century New York City. “My main inspiration is God, my family and my dreams, all of which make the magic that makes me see that the deepest desires come true,” Chef Avila shares. “To date, I have opened eight restaurants and two coffee shops, all with a lot of discipline, love and commitment. Our goal is to continue working hard, and once the doors open, we believe God directs us. We trust a lot in what He puts in our path and allows us to experi-ence.” Passionate about his faith, Chef also serves at his local Church and sup-ports his communities by giving donations to clubs, schools, non-profits, and cultural organizations. His life goal is to mentor children by opening a soccer organization, to practice the sport to play competitively but also work on life skills so they can steer clear of negative influences, keeping them focused on their studies, families, and fulfilling their own dreams like he has. -Kristen Kucharski, Photos Submitted Every December we feature 15 Fascinating Faces of the Year, highlighting suburban residents who are making a difference in the lives around them. CHARLES–Dr. Kalli is described as kind, compassionate and knowledgeable; so much so that most say she is a true health detective, and can find the root of any problem where traditional MDs have overlooked. She chose to pursue becoming a Chiropractic physician, spe-cializing in Functional Medicine, following her interest in non-invasive, natural approaches to health care after watching her diabetic grandfather suffer due to poor diet and lifestyle choices. Most people don't know that Dr. Kallie's understudies were in Sports Medicine and Athletics and she dreamed of being a Chiropractor for the NFL and had a wonderful experi-ence working with a Football team; however, changed her ca-reer path after a professor’s lecture on holistic gynecology. Now because of her knowledge and skills, Sage Healing Col-lective has won Best Women's Health Clinic every year since 2020. Ensuring her own health is a priority, Dr. Kallie decompresses by listening to books and podcasts, spending time in the gym, doing holistic health treatments for her own PTSD, and loves all things arts and crafts. She also supports local non-profit animal rescue organizations. Always expanding her clinical knowledge and skill set, she hopes to obtain certifications in acupuncture, and further her practice in Thai Abdominal work training and other traditional healing techniques. -Kristen Kucharski, Photos Submitted

Much like how Mallory unexpectedly met her husband Scott, they built an unlikely friendship sharing years of life stories, memories, lessons, and goals which included heart-to-hearts of some day finding the forever love they both deserved. SONNY ACRES FARMS It’s the most wonderful time of the year. But, what makes it so? After all, there’s much to celebrate throughout the year - birthdays, anniversaries, graduations and various holidays (to name a few). Yet, it’s different … magical … joyful. There’s a deeper sense of gratitude, gener-osity and kindness that fills the air. And just as Eddie Pola and George Wyle expressed in their 1963 classic Christmas hit, it’s a sea-son associated with cherished traditions and beloved activities with those we love. If you are looking for a new tradition this holiday season, check out Sonny Acres Farm. Located in West Chicago, this family-owned farm began in 1883 as a small-produce farm. For the last century, they’ve built a destination that’s more than just a farm - a location the whole family can enjoy. Its all-new Christmas lights show (Big & Bright Trail of Lights Festival) features dazzling lights, delicious treats and a photo-op with the iconic ‘Leg Lamp’ (a must-see holiday attraction for Christmas Story fans!). Its Christmas Market invites guests to fun finds, unique gifts, festive music and tasty treats. Explore its freshly-cut Christmas tree lot; the varieties include: Fraser Fir, Balsam Fir, Douglas Fir, White Pine, Scotch Pine, Black Hills Spruce and Blue Spruce. HOME IS WHERE THE HEARTH IS NAPERVILLE–Like the holiday season, Vasilis is all about family, food, laughter and Love. In fact, Vasilis is lovingly named after the creator’s father-in-law Bill, aka “Papou Vasili”, and the recipes are all handed down through multiple generations. The moment you step into Vasilis you will appreciate the warm and in-viting ambiance. With its Mediterranean-inspired décor you will feel right at home. Every time I come to Vasili’s I always order my two favorite starters for the table. The Vasilis chips, which are lightly fried zucchini and eggplant served with tzatziki sauce, and the Trio of spreads. Vasili’s has some of the best taramasalata, htipiti and hummus, but you can’t go wrong with any of the spreads as they all pair perfectly with the warm pita! The Gyros plate and the Souvlaki are two classics you will find to be so delicious. With Lamb being such a central component of many Greek meals, I encour-age you to try the Paidakia, which are Australian lamb chops. And lastly, the star of the menu is the Feta Brined Chicken. Its roasted Amish chicken with crispy shallots, charred lemon and dodoni feta. Their sides pair well with all their meals and are perfect for sharing. The roasted potatoes and broccolini being my favorites. A dinner like this would not be complete without dessert. We suggest a Baklava Cannoli or to share an order of Loukoumades, which are Greek donuts with honey and beyond delightful. Achieving excellence in the culinary world involves a combination of factors, from sourcing quality ing-redients to meticulous preparation and outstanding customer service and this is exactly what Vasilis de-livers every visit! Leaning into a “Latino Moderno” aka a contemporary Latin influence, we knew this tasting menu was going to be exceptional and bursting with amazing flavor combinations. It’s hard to narrow down a favorite from this multi course tasting menu but here are some of the standouts. Beginning with the starters, you must try the Ostones Hornados! These fresh oysters were topped with cream swiss chard and crispy bacon, the perfect combination of flavors and textures. Squeeze some grilled lemon on them for an extra burst of flavor and tanginess. These were followed by the Hamachi Tiradito. A dish consisting of fresh Yellowtail, cu-cumber, tajin, crispy rice, and a refreshingly smooth sauce. Our next two favorites were heartier dishes. The Pollo Adobo, a per-fectly seasoned free-range chicken on a bed of creamed bacon col-lard greens, with sides of charred okra and sweet potatoes, every single bite was delectable. This was followed by the Costillas y Gnocci which was the most delicious and tender short rib and gnocchi we have ever had. No tasting menu would be complete without dessert. The Lemon Lavendar pound cake was the most delightful creation of lemon curd, buttermilk honey, ice cream and macerated apples. It's clear that Santo Cielo takes great care in crafting their culinary offerings, unique libations and providing an unforgettable dining ex-perience. Bike Bald Jeep Parade OSWEGO–Do you own a Jeep? Know anyone who does? How fun would it be to decorate it in lights and holi-day decorations and join a parade of other Jeep owners as they parade through towns lit up and to the sounds of holi-day music? How much cooler would it be if all those Jeeps were filled with toys, gift cards and donations to support fam-ilies of children who are bat-tling cancer, rare illnesses or those in great need? A family tradition for many, Bike Bald’s Holiday Light Jeep Toy Ride is a night to remember. Based in Oswego, but supporting many of the sur-rounding communities, the Bike Bald organization is 100% operated by the hearts of volunteers and their families. Often the volunteers are kids who have made it through the battle and go on to help others. They have a unique understanding. “We work hard for every dollar that goes toward the operation of our non-profit,” says Debbie Mossburg, Executive Direc-tor for the Bike Bald Group. “There’s nothing better than the smile we get when have been there for fam-ilies that just felt they had reached their breaking point.” Bike Bald counts on donations from the community as well as hosts a multitude of fundraising events in-cluding, local workshops, chili cookoffs, trivia nights and biking events. The Holiday Light Jeep Toy Ride has become their largest and most attended event. Nearly 7,000 toys are collected and distributed every year with over 165 Jeeps registered to ride. This year the event is being held on Saturday, December 9th at 6:00pm starting from Troy Middle School on Theodore St. in Plainfield. Being es-corted by the police, Jeeps will make their way west through Joliet, Plainfield, Yorkville, Plano and Os-wego. Registration is FREE! The ride ends at Santa’s Workshop, a vacant storefront in Oswego that is granted to the organization to hold all the toys and supplies. A special magical evening, open to the public, is then held for the children and families supported by Bike Bald with singing, food, movies and volunteers in character such as elves, reindeer, and the sugar plum fairy all to wel-come the arrival of Santa. Cov-ering 120,000 square feet and holding more than 317,000 gallons of water, the waterpark features 11 slides, including the Electric Eel, Sonic Serpent and Barracuda Blaster tube slides, full of tight corners and banking turns; three Tidal Racers mat racer slides for head-first excitement; and five waterslides suitable for younger visitors at Slide Island. Island Waterpark also features a 1,000 square-foot Wild Wave FlowRider surf simulator that will host surfing tournaments and is the only waterpark surf simulator in New Jersey to offer surf lessons; Blue Cas-cade Waterfall, a man-made waterfall that is one of the largest custom water forms in the world; a 30-foot-tall Indoor Tree House that can be booked for private parties; Adventure Pool, where guests can play various water sports; a 6,500 square-foot Island Drift Lazy River that extends nearly the entire length of the waterpark; and Kids Cove, a play area with interactive water activities de-signed for younger visitors. Each is designed according to the waterpark's exotic island theme to make visitors feel like they've been swept away to a tropical paradise. “Atlantic City has long been one of the most iconic destinations for entertainment geared for adults, but now the ISLAND Water-park at The Showboat Resort will open up a whole new world of family entertainment on the boardwalk," said Bart Blatstein, Tower Investments CEO and Showboat owner. "When people see this they will be blown away; it is truly like entering a tropical paradise and the best part is that people–both kids and adults–will be able to enjoy it all year round." “ISLAND Waterpark, the largest indoor beachfront waterpark, is in a class of its own," said Brandon Dixon, President of Tower Investments. "No matter the weather nor time of year, everyday will always be warm and sunny in the waterpark. At night it also will be hot year round with nightlife entertainment for adults. This opening rides on the success of the Lucky Snake Arcade and Raceway, and Showboat is so proud to continue to deliver the most dynamic and exhilarating non-gaming fun on the Atlantic City Boardwalk." For adults, the waterpark features a total of six bars where guests can enjoy craft beers, curated wines and signature cock-tails; and Paradise Adult Island, a 10,000 square-foot space overlooking the waterpark and ocean that includes DJ entertain-ment and Bliss Pool, an adults-only pool facing the Atlantic Ocean with the only swim-up bar in Atlantic City. During the day these venues are an oasis for parents and adults to dance, es-cape, relax and socialize while the kids enjoy the waterpark; the adults-only area includes Peloton bikes, manicure stations, chair massages, work spaces, VIP cabanas and more. At night, ISLAND Water-park transforms into a nightlife venue, also for adults only–the first of its kind at any water-park. In addition to the water fea-tures, ISLAND Waterpark also includes two attractions not available at any other in-door waterpark in the US: a more than 1,000-foot Coconut Zero-Gravity Coaster that takes guests on a ride sus-pended high above the waterpark and offers spectacular panoramic views of the ocean and boardwalk; and the 300-foot-long RipTide Zip Line. The waterpark's unique glass retractable roof will be open to allow ample sunshine and fresh ocean breezes during the warmer months and can be closed during in-clement and colder weather making Island Waterpark a year round entertainment destination. The roof can also be used for projection displays, such as stars or island imagery, adding to the versatility of the waterpark's ambience. ISLAND Waterpark builds on The Showboat's existing entertain-ment platform, including the Lucky Snake Arcade–the largest ar-cade in the world. The more than 200,000 square-foot venue features the 40,000 square-foot Raceway Go Kart Indoor Track and more than 600 games, including pinball, virtual reality, bowl-ing and more. As part of the launch of The Showboat Resort, the arcade expansion will include additional attractions rolling out over the summer including disco-themed roller blading, state-of-the-art, classic games-themed mini golf, a 40-foot-tall climbing wall, and the largest Zoltar fortune teller in the world. The transformation into The Showboat Resort will also mark the completion of the iconic Showboat's first phase of hotel ren-ovations, including 477 guest rooms among which are 36 Bal-cony Suites - featuring the only balconies on the Atlantic City Boardwalk - two Super Suites and 16 Junior Suites. Further re-vamping of the additional towers' rooms, suites, lobby and other common areas is expected to be completed by fall of 2023. 255 of these units will debut as Premier Lite Apartments that are available as long-term leased luxury dwellings. The Showboat Resort has 11 food and drink offerings ranging from VIP cabanas with food and cocktail service at the waterpark to Island Plaza, an expanded outdoor boardwalk section featur-ing an amphitheater, classic boardwalk fare and a seasonal Fes-tival Marketplace. www.islandwaterparkac.com Glancer Magazine • DECEMBER 2023 • WESTERN SUBURBS • 71

Pizza & Culinary Craze! Indulging in the art of soppressata making can be more than just a culinary experience; it can be a bonding journey for generations. At the North American Pizza & Culinary Academy, the Master Soppressata Making Class offers a unique opportunity for people to come together, creating not only delicious cured meats but lasting memories. I am lucky to have a large family and share a bond with my parents that is beyond a Christmas blessing. For an adult daughter and her Italian dad, this class became a cultural bridge, connect ing us through the traditions of Italian charcuterie and quality time. The expert instructors guided us through the entire process, from selecting the finest cuts of meat to mastering the bal-ance of spices. We learned the importance of patience and precision, as crafting this beloved Italian cured sausage is as much about technique as it is about tradition. For an active adventurous girl like me, patience is not my number one skill, but the anticipation of the end results made it worth the wait! As we worked side by side, we grinded over 100 lbs. of meat, mixed in several cups of spices, and slowly filled the casings one by one, tying each end with perfection, and poking tiny air holes to promote the drying and curing process. The hands-on nature of the class fosters com-munication and collaboration. We laughed, shared stories, and then enjoyed homemade pizza, prosciutto, cheeses, and previously cured soppressata. We not only gained a newfound skill but also created a tangible representation of our heritage. In a world filled with fast-paced living, this experi-ence offers a rare chance to slow down and savor the flavors through various pizza making classes, kid’s cooking lessons, demonstrations, date nights, and so much more. Glancer Magazine • DECEMBER 2023 • WESTERN SUBURBS • 87TTOODDAAYY’’SS KKIITTCCHHEENNA NEW KITCHEN BUILT FOR ENTERTAINMENT NAPERVILLE–Whether you like to host your family or your entire neighborhood, your kitchen should be ready for action at all times. If you’re thinking about renovating your kitchen to become the per-fect setting to entertain, here are some ideas to make it happen from the design team at The Kitchen Master. Boost Your Storage-No matter what your entertaining style, you’ll need additional shelves, drawers and cubbies for china and glass-ware, serving pieces and silverware, tablecloths and napkins, can-dlesticks and bread baskets. Even if your idea of a party is paper plates, plastic forks and bottles of beer, plan a way to stow the burger buns, bags of chips and condiments until it’s time to serve. Designate Kitchen Zones-Whether your new kitchen is large or small, multiple work stations will serve crowds or accommodate a crowd of cooks. Nothing gets in the way of a party faster than hav-ing to elbow others out of the way! Create Traffic Lanes-Think about circulation. If you plan to have crowds in your kitchen, widen the aisles and try to create a logical path for guests who come to help or hang out. Islands and pen-insulas are great solutions, keeping gawkers at bay while encour-aging conversation. Set Up Serving Counters-Score an “A” in your party kitchen with lots of counter space. A large island will double as a buffet table. A beverage center along one wall will eliminate congestion. Include a bar sink, an ice maker and under-counter wine chiller or refrig-erator. Show Off Your Stuff-Think about the things you love. If you have a collection of antique milk glass or old cast-iron cooking pots or grandma’s teacups find a way to display them. Your collections are great party props! Defy Tradition-Today, there are specialized tools and appliances to fulfill all needs. Install a steam oven and a warming drawer if that sounds like an “entertaining” idea. Add an under-counter beer keg or a wine tap. Consider an indoor grill if you can’t make it through the winter without a perfectly grilled steak. Whatever you deem important for your party room, our profes-sional designers would love to help you transform your kitchen into your vision of a great space. Call us and let’s get that party going. Since 1977, The Kitchen Master has assisted thousands of home-owners design and build every kind of kitchen imaginable. CHARLES–In the heart of historic downtown St. Charles, 3rd Street Dance stands as a testament to the vision of owner and di-rector, Alice Williams. Williams grew up in St. Charles, and 27 years ago, embarked on a mission to create a non-competitive dance stu-dio that inspires students to believe in themselves, spread joy and build lifelong friendships. It’s a home where, as she says, “Kids can be kids, have fun, and find their best friend.” At 3rd Street Dance, students embrace the beauty of dance without worrying about external pressures. As the only local St. Charles studio affiliated with the national organization More Than Just Great Dancing®, they takes pride in providing a quality curriculum and a safe and nurturing environment for its young dancers to grow and flourish. Dance has the power to bring about positive change in a com-munity. 3rd Street Dance give back, organizing charity events and fundraisers, using passion for dance to raise awareness for local causes. These experiences teach young dancers the value of em-pathy, compassion, and the joy of helping others. The studio’s non-competitive approach to dance has allowed count-less children to discover the joy of movement and creativity without the fear of judgment. As Williams continues to champion the belief that “kids should be kids for as long as humanly possible,” the 3rd Street Dance legacy lives on by offering a variety of classes focus ing on fun, learning, and growth.
